I've been experimenting with my breakfasts as per usual, and yesterday I tried a roasted ground amaranth porridge. Although it is safe to say that it won't surpass my love for oats, I dare to say that it was darn good. It was so creamy and delicious! Here's proof that it's nice and fluffy.
It was topped with the nut butter from the other day. I guess the title of this post gave it away huh?!
This morning I had WF's flax waffles and they're to die for--they are nutty and slightly sweet, just the way I like it.
These were topped with PB&CO's Dark Chocolate Dreams, fruit, and "coconut cream" (coconut flour+almond milk).
And then of course, as I was perusing through some awesome blogs, I landed on Joy the Baker's blog featuring coconut waffles. Let me just say that I was THIS close to biting the screen...and THIS close to buying my own wafflemaker. :P
Oh my coconuts, how I like thee. With coconut flour one can whip up some great simple recipes. Joy has really good recipes that I'm hoping to try really soon.
So as I promised the other day, I'll be sharing with you how to make this nut butter.
It's so simple that you'll fall back on your chair. :D
Banana Almond Butter
1 1/4 C raw almonds
1/4 tsp sea salt
2 TBSP maple syrup
1 TBSP almond milk
1/2 tsp ground vanilla powder (or 1 tsp extract)
1/2 large mashed banana
Pre-heat your oven to 350 F.
Then, in a medium bowl, mix all the ingredients together except for the banana. Coat the almonds in the mixture evenly.
Roast it for approximately 15 minutes and check back a few times so it doesn't burn. Let it cool down for 5 minutes.
Process the mixture for at least 5-6 minutes or until it becomes creamy. Lastly, combine the mashed banana with the nut butter. Or, you can incorporate it while processing.
Ta-da! It is finished. :) Simple right?
This one is best kept refrigerated please!
