It's official my beloved friends! "What's official Ellie?"

Okay wait a second...Would you like the good news or the bad news?
Well, the good news is that tomorrow--at exactly 11:00 a.m. on Wednesday the 8th--I will gain back my vision through Lasik surgery! Eeeeeek.
The bad news is that I will be completely alert and able to see the doctor go straight into my eye. Double eeeeek.
You see, I've been wanting to get Lasik for a long long time, but now is the perfect time for it since I'm out of school for the time being. My vision is the maximum for the Lasik requirements according to Dr. Joseph. If -8.5 isn't called "blind" then I don't know what is. I also recall seeing Mama Pea's adorable and hilarious post a while back. I can say that it got me quite excited, yet terrified all at the same time.
Yes my friends, I will be smelling like burnt octopus or better yet, burnt flesh. Ewww I know. :P
So please lift me up in your prayers if you can. I have confidence though, that my doctor will do a marvelous job! He is so kind and gentle that he makes me want to be his sister and give him a high five. I realize that's kind of odd and utterly random, but it's the truth.
This takes me to another somewhat related (or not) topic. I cannot even begin to thank the Lord and praise Him for this rare opportunity to fix my peepers!
As I reflect on this blessing, I ponder about how there is a myriad of individuals who can't even get glasses--particulary in third world countries.
I remember being in India and Myanmar, and seeing only the wealthy folk donning on nice, big honkin' glasses. The rest were either coping with their nearly-blind sight or simply unaware of the better possibilities out there. Then again, I guess it wasn't really a possibility for most of them.
Sometimes, we don't know that the grass is greener on the other side.
My point is, whether I have or have not, I choose to be grateful. I choose to be content where I am and with who I am. More importantly, with WHOSE I am.
It is just so easy to get wrapped up in different mindsets and take simple privileges for granted! So my assignment to all of us is to be thankful for our BEAUTIFUL EYES.
On a different note, today was a beautiful day here in So Cal!
Since my sister and nephew Daniel can't go out as much because of the ride situation, today I had the time to hang out with them.
We headed to the...yeap, once again! We went to walk around the beach. Haha, what do you expect? Almost every outing is at the beach for some reason. :P
Daniel looks like a cute+sad puppy in many pictures because he seems to always be thinking about life or something. He's also a little shy at first, but then he warms up to people rather quickly! He especially loves older males who make silly motions and sounds.

After the beach, we went to Whole Foods and purchased much-needed groceries--like Liberte Mediterranee yogurt and Artisana's Coconut Butter . I always refused to pay $13 for CB, but boy was I missing out! Although I've made my own CB before, it paled in comparison to Artisana's creamy and soft, buttery texture.
I also love how lately I've been able to cook and bake so often. It is such a great way to relax and have fun.
Yesterday I set out to make my very first Irish Soda Bread! Actually, it was my first time ever trying it. I used Joy of Baking's recipe and made a few substitutions to use what was already in the pantry.
I added walnuts and made my own sour milk instead of store-bought buttermilk.
The exterior was rather tough, but the interior won my heart.
It is so heavenly when it is spread with butter or even sunflower seed butter.
I also FINALLY got to make lasagna for the family and Greg. I used Sharon's recipe (Greg's momma!) and the result did not disappoint.
You can certainly ask me for the recipe if you like.
As for working out, I've been doing a lot of weight training alongside with High intensity bodyweight/plyos. The adrenaline from sweating and huffing+puffing can't be beat! Anyone else agree?

I am most definitely not at this point yet, but I am learning and growing from God's perfect love. I do hope to someday be like this courageous man uttering these beautiful words though!
