So many thoughts have been racing back and forth in this little brain of mine, and amongst those very thoughts you will find that I’ve been thinking about good food, fighting off a cold, and praying about the great phenomena going on in this world.
First, let’s start off with this fantabulous french toast. As if french toast could get any better, this time I made it tastier by using a really soft and decadent loaf of cinnamon swirl bread from the grocer’s bakery. I simply dipped it in a mixture of egg, milk, and vanilla. Then, I cooked it with a little bit of coconut oil to give it a richer taste. If you’ve stuck around my blog for a while you would know that I love to caramelize fruit for breakfast—and that’s exactly what I did with these sweet juicy pears! Try it, you won’t regret it.
Pasta has been a staple in our household lately because it’s just so easy to make, freeze, and reheat for those days when we’re on the go! Since I’ve been fighting off a cold that left me rather weak yesterday, I left work early and fell into a deep sleep in the middle of the day as soon as I got home, which is a rare occurrence for this gal. You can imagine how thankful I’ve been for simple, delectable meals like pasta as of late, and yesterday I had the brilliant idea to bake a portabella mushroom to use it as a base for some noodles and pasta sauce. The earthiness of the mushroom definitely added an amazing flavor to this simple dish.
Then evening came. My husband was sweet enough to buy me this gorgeous bouquet of tulips to sweeten up my day! He has always been one to pull those kinds of gestures when I least expect it, especially yesterday since I was pretty dazed out.
All in all, I’m so happy to report that I’m feeling almost 100% better today and had the energy of a monkey since morning! Yay! And although there are so so so many sad things currently going on in the world (ex: North Korea and their skewed views) that are utterly heart-breaking, I’m also reminded that God is truly bigger than the air I breathe. This world has become crazy because of us crazy humans, as humbling as that may sound to many of us…God on the other hand, has nothing but infinite love for me and you.
