Recipe for a Mexican Fiesta and My Homegirls

Ayyyy arriba damas y caballeros!  What...?  I thought that would be a cute and fun intro in honor of a fun post.  I guess I'm the only one laughing here.  So what's new in my life?! :P I have a delicious and healthy pair of recipes that will make you, your momma, your papa, your husband, and your dog [if you have one] leap for joy.  In Greg's case, he leaped for more of this dishI remember that not too long ago I was in the kitchen whipping up the "best-ever-guacamole" recipe to surprise my dear husband and hopefully my fellow blog readers.  I was ready to type something along the lines of, "Hey guys!  Guess what?  I just came up with the best guacamole and you'll think you died and went to heaven", all the while I was ready to tweet about it, pin it on my pinterest boards, and perhaps even become famous for making the "best-ever-guacamole" recipe and start writing a book about one single guacamole recipe.

Yeah, I'm a sad woman.

But I was not ready to give up a fight because of a bunch of little avocados that were way overripe and fresh onions, which, by the way, made the dish taste strange and sour.  But not in a positive way.  In order to remedy that, I aimed for perseverance, patience, and just a few tweaks to the ingredients.

Lo and behold, two nights ago I decided to take the challenge and with some sugar salt and spice and everything nice, the best-ever-guacamole recipe was born.



Guacamole (or avocado) has long been avoided by "dieters" and people who seek to live healthy lifestyles.  However, research claims that one avocado is a powerhouse of vitamins, particular vitamin E, and is great for one's health all around.  The consumption of these vitamins and minerals allows one to have strong and healthy hair, bones, skin and heart-health.  Studies show that a reasonable amount of these healthy fats can actually be beneficial for weight loss too. This guacamole is chunky and zesty enough to make one go back for seconds and thirds.  It's a great choice for Mexican dinner night or to take to a party as an appetizer!

Serves 2-4 depending on individual.


  • 2 whole ripe avocados
  • 1 fresh garlic clove, chopped
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt (or to taste)
  • 1 TBSP lime juice
  • 2 TBSP fresh cilantro, chopped


  1. Cut the 2 avocados in half and take out the pit with a knife.  Then grab a spoon and scoop out the avocado flesh.  Put it in a medium bowl and start to mash it with a fork, but leave some chunks for extra texture.
  2. Add the chopped garlic, onion powder, salt, lime juice, and cilantro.  Mix it with the fork until it's fully incorporated.
  3. Refrigerate for at least 20 minutes so it stays fresh and until the flavors come together.

To go along with this appetizer, I decided to make some healthy stuffed bell peppers.

Stuffed Mexican Bell Peppers {Healthy-Low Fat}


For this dish I used minimal amounts of fat aside from the rotisserie chicken I added along with the Safflower oil.  See the benefits of Safflower oil here


  • 1 C fresh or frozen corn (I shucked a fresh corn)
  • 1/2 an onion, chopped
  • 2 garlic cloves, chopped
  • 1 C rice, already cooked
  • 2 TBSP tomato paste
  • 1 TBSP Safflower oil
  • 1 C water+1/2 of a vegan bouillon cube (Can use 1C broth instead)
  • 2 TBSP white cooking wine
  • 1/2 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • salt+pepper to taste
  • 2 TBSP cilantro, chopped
  • 2 TBSP lime juice
  • 1 C shredded rotisserie chicken (I had leftovers)


  1. Grab a medium-large pot and let it heat on medium heat for a minute.  Add the oil and the chopped onions so that they become slightly caramelized.  It should only take a few minutes.
  2. Add in the water+bouillon, rice, corn, garlic, and let it simmer for a few minutes.  Then add the tomato paste, all the spices, salt and pepper, lime, chicken, and cooking wine.  Throw in the cilantro last.  Turn the heat to low-medium and stir with a wooden spoon every now and then to prevent sticking and burning.  Once the liquids are mostly absorbed, the mixture is ready.
  3. Preheat the oven to 425 F degrees.  Cut the tops of the bell peppers and take out the seeds.  Stuff them with the rice mixture and stand them up on a narrow loaf pan.  Bake for approximately 18-20 minutes and add cheese after it's done.

I used Trader Joe's Rice Medley mix and I loved the taste and texture of it!

Greg jolted at the first taste of the guacamole and polished off his entire plate!  ;)  Score!  Hehe.

Night with the Girls at Kabuki


Last night I met up with my friends Susan, Emily, and Jennifer.  I haven't seen Jennifer ever since the 2nd year of college, and seeing her after so many years made me smile like crazy!

We had some awesome conversations over a delightful dinner at Kabuki in the city of Cerritos.  The girls were particularly curious about married life and all the quirks that come with it.  I have to admit that sometimes even my introspective self isn't ready to answer all those questions!  But ultimately they really make me think and appreciate my life with Greg.

We started off with the typical Edamame bowl as the appetizer.

Then Emily ordered the Kabuki roll, and as you can see it is an array of some of the specialty rolls that Kabuki has to offer! She's not a big fan of "weird" foods like the salmon roe eggs, so I was more than happy to eat them for her.  Yeah, she had to twist my arm.  (Not really) :P

Lately I've been craving fish like no other, so I went with one of my favorite dishes called the Sunkissed Roll.

If  you ever happen to drop by a Kabuki restaurant, I highly recommend my favorites:

  • Kabuki Roll
  • Sunkissed Roll
  • Lotus on Fire (super good and spicy)
  • Teriyaki Salmon dish (Susan ordered it)

The ambiènce is quite friendly and well lit, which is a big plus for me because I get to see the beautiful faces of my loved ones while we talk!  It's always packed but in a good way, as one doesn't have to wait 20 minutes in order to get seated due to the large amount of space.   Although it's a rather nice sushi joint, it never costs an arm and a leg to eat here, so I recommend this place to anyone who loves raw fish.

Oh yeahh baby!

After our sushi feast we headed over to the Guppy Tea House down the street, where they serve the infamous Brick Toast dessert.  We doubled it up and ordered the coconut brick toast and peanut butter brick toast.  Those two thick monsters with a side of fresh fruit definitely filled us up!  [Then I got a stomach ache].  Woops.

Do you use fresh onion in guacamole?  If so, does it taste fresh?

-My experience with it tells me that onion powder is the best way to go.

What are the best parts about marriage or singleness for you?

-I got asked this question by my friends.  I would say that the best part about singleness is the fact that my decisions don't make too much of an impact on others, especially that significant other.  And what I like best about marriage is that there's always someone who will walk with me and pray for me through the fire.  The feeling of coming home to someone who loves me and I love in return is priceless!
